In a large resealable bag, combine chicken, minced garlic, chipotle peppers, adobo sauce, 3 tablespoons of olive oil, ground cumin, white vinegar, kosher salt, black pepper, and honey. Seal the bag and toss to ensure the chicken is thoroughly coated. Refrigerate for a minimum of 4 hours, or preferably overnight. (Prep time: 15 minutes, Marinating time: 4+ hours)

Preheat your oven to 350 degrees F (175 degrees C). (Prep time: 5 minutes)

Heat a large cast iron skillet over medium-high heat. Add a touch of olive oil if needed to prevent sticking. Place the marinated chicken in a single layer in the skillet and cook without disturbing, until a deep golden-brown crust forms and the chicken releases easily from the skillet, approximately 5 to 7 minutes per side. (Cook time: 5-7 minutes)

Flip the chicken and transfer the skillet to the preheated oven. Continue cooking until the chicken is no longer pink in the center and the juices run clear when pierced with a fork, about 20 minutes. An instant-read thermometer inserted near the center should register 165 degrees F (74 degrees C). Allow the chicken to rest for 10 minutes before slicing and serving. (Cook time: 20 minutes, Rest time: 10 minutes)

For an extra layer of flavor, consider adding a splash of orange juice to the marinade.
If you don't have a cast iron skillet, a heavy-bottomed oven-safe skillet will also work well.
Serve this chicken with your favorite Chipotle-inspired sides, such as cilantro-lime rice, black beans, and fresh salsa.
